Chestnut Mushroom Toast

This culinary symphony of earthy goodness is both comforting and sophisticated. It’s a versatile dish that transitions easily from a hearty breakfast to a satisfying lunch or even an indulgent snack. The combination of buttery sage-infused mushrooms, fragrant garlic, and a sprinkle of parmesan atop sourdough makes this dish fit for any occasion!

Ingredients:

  • 2 tbsp butter (plus extra for toast)
  • 1 tbsp dried sage (or favorite dried herb)
  • 2 cloves minced garlic
  • About 100 grams of Chestnut Mushrooms
  • 2 slices of your favorite bread (we used homemade sourdough)
  • Flaky salt
  • Pepper
  • Sprinkle of Parmesan for garnish (optional)

Instructions:

  • On medium heat, melt 2 tbsp of butter in a skillet with dried sage until the sage becomes fragrant (about 4-5 minutes). Remove the sage and set it aside.
  • Add minced garlic to the sage-infused butter and sauté for 1-2 minutes until fragrant.
  • Add mushrooms to the skillet, turning them to coat in the sage butter. Cook until the mushroom stems start to soften (approximately 7-9 minutes). If the mushrooms begin to dry out, add a bit more butter or some olive oil.
  • Toast 2 slices of your favorite bread, butter them, and top with the cooked mushrooms.
  • Garnish the toast with the reserved chopped buttered sage, some Parmesan cheese, and a sprinkle of flaky salt.

Variations:

  • Make it Vegan: Instead of butter, use coconut oil, olive oil, or margarine!
  • Mushroom Variation: Experiement with Blue Oysters, Pink Oysters, or Lion’s Mane for different flavour profiles and textures.
  • Herb Variations: Experiment with different herbs such as thyme, rosemary, or parsley, providing a new and delicious flavor profile.
  • Creamy Twist: Spread a thin layer of cream cheese over the toast instead of butter for a creamier base. Take it a step further by mixing reserved herbs into the cream cheese!
  • Pesto Delight: Replace butter on the toast base with fresh pesto for a delightful twist!
